Looking for differentiation, Victoria Ordóñez decided to include in her wines the native grape variety Pedro Ximenez from the Mountains of Málaga This is the most characteristic grape used in Málaga wines, since it was only cultivated in Málaga, and from the seventeenth to nineteenth centuries it gave rise to Málaga’s wines and won them international fame. After the arrival of phylloxera, the elaboration of these wines, which were in many cases dry, had been abandoned. We are, therefore, looking at a risky and innovative project due to the lack of reference points for this type of wine.
Her research led her to explore a wine-growing area that had previously been forgotten: the Mountains of Málaga. This includes the municipalities of Málaga, Casabermeja and Colmenar. To find the practically non-existent Pedro Ximenez, months of investigation were necessary to locate small plots containing old vineyards. In these, a laborious task of selection was then carried out to separate the Pedro Ximenez from other varieties coexisting in the same plots, a situation which is typical in old vineyards. The Regulatory Board of the Denominations of Origin “Málaga” and “Sierras de Málaga” collaborated in this task.
In addition to introducing the Pedro Ximenez from the Natural Park of the Mountains of Malaga , Victoria Ordóñez has continued in her commitment to her new venture with another native grape, Moscatel, a variety that she knows well and has worked with throughout her professional career. For this, she has selected vineyards at almost 1000 metres of altitude, in the Natural Park of Sierra Tejeda in Malaga’s Upper Axarquía.
